Most Amarone is made from three classic grape of Veneto: Corvina, which is a light and fruity grape, Rondinella, which has neutral flavors but produces high yields and dry well, and Molinara, which has bright red fruit flavors and adds a pleasant acidity to the blend. Winemakers choose only the best grapes for the Amarone. These grapes are then dried until they are almost to the point of becoming raisins (usually 120 days).This concentrates the sugars and flavors. After drying, the grapes are crushed and go through a dry low temperature fermentation process which can last up to 30/50 days. After fermentation the wine is aged in barriques made of French and/or Slovenian oak.
